Ingredients

  • 250 ml water
  • 100 g unsalted butter
  • 1 pinch salt
  • 150 g all-purpose flour
  • 4 large eggs
  • 500 ml milk
  • 150 g granulated sugar
  • 6 large egg yolks
  • 1 tsp vanilla extract
  • 200 g dark chocolate (for glaze)
  • 50 g unsalted butter (for glaze)
  • White chocolate (for drizzling)

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. In a saucepan, combine water, butter, and a pinch of salt; bring to a boil.
  3. Add flour, stirring vigorously to form a dough; cook for 2-3 minutes.
  4. Remove from heat, let it cool slightly; add eggs one at a time until well incorporated.
  5. Pipe the dough into 4-inch long strips on a baking sheet lined with parchment paper.
  6. Bake for 20-25 minutes until golden and puffed.
  7. Allow éclairs to cool completely on a wire rack.
  8. Prepare the vanilla pastry cream by whisking the egg yolks and sugar until pale.
  9. Scald milk; gradually add it to the yolk mixture, then return to heat and stir until thickened.
