Ingredients

  • 500g puff pastry
  • 400g golden apricots
  • 100g apricot jam
  • 1 tablespoon water
  • 1 tablespoon flour (for dusting)

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Roll out the puff pastry on a floured surface until it's about 5mm thick.
  3. Cut the pastry into rectangles to fit your tart pans.
  4. Place the pastry rectangles into the greased pans, pressing gently into the edges.
  5. Prick the bottom of the pastry with a fork to prevent it from puffing too much.
  6. Blind bake the pastry for 15 minutes, then remove from the oven.
  7. While the pastry cools, prepare the apricots by slicing them thinly.
