Ingredients

  • 1 sheet of puff pastry
  • 200g of goat cheese
  • 100ml of heavy cream
  • 2 tablespoons of fresh herbs (like basil and thyme)
  • 300g of assorted heirloom tomatoes
  • Fresh basil leaves for garnish
  • Olive oil for drizzling
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Roll out the pastry dough and fit it into a rectangular tart pan.
  3. Prick the bottom of the tart crust with a fork and refrigerate for 15 minutes.
