Ingredients

  • 500g potatoes, diced
  • 200g leeks, chopped
  • 100ml cream
  • 50g butter
  • 500g shortcrust pastry
  • 1 egg, beaten (for glazing)
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. In a pan, melt butter over medium heat and sauté the chopped leeks until softened.
  3. Add diced potatoes and cook for another 5 minutes until they begin to soften.
  4. Stir in the cream and season with salt and pepper, then set aside to cool.
  5. Roll out the pastry dough on a floured surface to about 3mm thick.
  6. Cut out circles of dough, about 10cm in diameter.
  7. Place a spoonful of the filling in the center of each circle.
  8. Fold the dough over to create a semi-circle, sealing the edges by crimping with a fork.
  9. Brush the tops with beaten egg for a golden finish.
  10. Bake in the preheated oven for 20-25 minutes until golden brown.
  11. Allow to cool slightly before serving.
