Ingredients

  • 200g all-purpose flour
  • 75g unsweetened cocoa powder
  • 200g granulated sugar
  • 100g unsalted butter
  • 3 large eggs
  • 200ml buttermilk
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 300g fresh cherries
  • 300ml heavy cream
  • 100g powdered sugar
  • 200g chocolate glaze
  • 3 tablespoons cherry liqueur

Instructions

  1. Preheat the oven to 175°C (350°F) and grease two 9-inch round cake pans.
  2. In a mixing bowl, combine flour, cocoa powder, baking powder, and salt.
  3. In a separate bowl, cream together sugar and butter until light and fluffy.
  4. Add eggs, one at a time, mixing well after each addition.
  5. Gradually mix in the dry ingredients, alternating with buttermilk until well combined.
  6. Pour the batter evenly into the prepared cake pans and bake for 25-30 minutes.
  7. Once baked, remove from the oven and let them cool completely on wire racks.
  8. While the cakes cool, prepare the cherry filling by pitting and halving fresh cherries.
  9. In a separate bowl, whip heavy cream until soft peaks form and mix in powdered sugar.
  10. Once cooled, slice each cake in half horizontally to create four layers.
  11. On a serving platter, place one layer of cake and soak with cherry liqueur.
  12. Add a layer of cherry filling and whipped cream, then repeat for the other layers.
  13. Top with the last layer of cake, cover with the remaining whipped cream, and drizzle with chocolate glaze.
  14. Garnish with fresh cherries and serve chilled.
