Rustic Sablés Breton Cookies with Rosemary

Ingredients

  • 150g unsalted butter
  • 100g sugar
  • 2 egg yolks
  • 250g all-purpose flour
  • 1 tbsp fresh rosemary (finely chopped)
  • Pinch of salt

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. In a bowl, cream together 150g of unsalted butter and 100g of sugar until light and fluffy.
  3. Add 2 egg yolks and mix until fully incorporated.
  4. Gradually fold in 250g of all-purpose flour and a pinch of salt to create a smooth dough.
  5. Stir in finely chopped fresh rosemary (about 1 tbsp) for added aroma.
  6. Wrap the dough in plastic wrap and chill in the refrigerator for 30 minutes.
  7. Roll out the chilled dough to about 5mm thick on a floured surface.
  8. Cut out desired shapes using cookie cutters and place them on a parchment-lined baking sheet.
  9. Bake for 12-15 minutes or until the edges are golden brown.
  10. Allow to cool on a wire rack before serving.
