Ingredients

  • 500g puff pastry
  • 200g granulated sugar
  • 100ml water
  • 6 large egg yolks
  • 200ml heavy cream
  • 1 teaspoon vanilla extract
  • Fresh berries for garnish (optional)

Instructions

  1. Preheat the oven to 220°C (428°F).
  2. Roll out the puff pastry on a floured surface until thin, then cut into circles to fit your muffin tin.
  3. Grease the muffin tin and place the pastry circles inside, pressing them gently into the bottom and sides.
  4. In a saucepan, combine sugar and water and cook until the sugar dissolves to form a syrup. Allow to cool.
