Ingredients

  • 1 sheet of puff pastry (about 240g)
  • 1 can of pineapple rings (about 450g)
  • Maraschino cherries (for topping)
  • 50g unsalted butter, melted
  • 50g granulated sugar

Instructions

  1. Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. Roll out the puff pastry on a floured surface to about ¼ inch thick.
  3. Cut the pastry into circles, then place them on the prepared baking sheet.
  4. Drain the pineapple rings and reserve the juice.
  5. Place one pineapple ring in the center of each pastry circle.
  6. Top each pineapple ring with a maraschino cherry.
  7. Brush the pastry edges with melted butter and sprinkle with sugar.
  8. Bake in the preheated oven for 20-25 minutes or until golden brown.
  9. Remove from the oven and allow to cool slightly before serving.
  10. Drizzle with reserved pineapple juice if desired.
