Ingredients

  • 200g crushed graham crackers
  • 100g melted butter
  • 450g cream cheese
  • 150g granulated sugar
  • 3 large eggs
  • 200ml sour cream
  • 1 teaspoon vanilla extract
  • 200g blueberry compote
  • 100g flour (for streusel)
  • 50g brown sugar (for streusel)
  • 30g cold butter (for streusel)

Instructions

  1. Preheat your oven to 180°C (350°F) and prepare a springform pan by greasing it with butter.
  2. In a mixing bowl, combine 200g of crushed graham crackers with 100g of melted butter to form the crust. Press the mixture firmly into the bottom of the prepared pan.
  3. In a separate bowl, beat 450g of cream cheese until smooth, then add 150g of granulated sugar, and mix until fully combined.
  4. Add 3 large eggs, one at a time, mixing well after each addition. Incorporate 200ml of sour cream and 1 teaspoon of vanilla extract.
  5. Pour half of the cheesecake mixture over the crust, then spread a layer of 200g of blueberry compote on top. Follow with the remaining cheesecake mixture.
  6. To make the streusel topping, mix 100g of flour, 50g of brown sugar, and 30g of cold butter until crumbly, then sprinkle it over the cheesecake.
  7. Bake in the preheated oven for 50-60 minutes or until the center is set but slightly jiggly.
  8. Once out of the oven, let the cheesecake cool at room temperature for an hour, then refrigerate for at least 4 hours or overnight to set completely.
  9. Before serving, garnish with fresh blueberries and enjoy your blueberry crumble cheesecake!
