Ingredients

  • 200g all-purpose flour
  • 100g unsalted butter
  • 50g sugar
  • 1 egg yolk
  • 3-4 tablespoons cold water
  • 300ml milk
  • 100ml elderflower cordial
  • 2 egg yolks
  • 50g sugar
  • 20g cornstarch
  • 1 teaspoon vanilla extract
  • Edible flowers for decoration

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Prepare the tartlet pastry by mixing flour, sugar, and butter until crumbly in texture.
  3. Add egg yolks and cold water, mixing until a dough forms.
  4. Roll out the dough and cut it into circles to fit your tartlet pans.
  5. Press the dough into the pans and refrigerate for 30 minutes.
  6. Bake the tart shells for 15 minutes until golden brown, then allow to cool.
  7. In a saucepan, heat milk and elderflower cordial until just below boiling.
  8. Whisk together egg yolks, sugar, and cornstarch in a bowl.
  9. Slowly pour the hot milk mixture into the egg mixture, whisking constantly.
  10. Return the mixture to the saucepan and cook until thickened, stirring constantly.
  11. Remove from heat and add vanilla extract.
  12. Pour the custard into the cooled tart shells and chill in the refrigerator for at least 2 hours.
