Ingredients

  • 250 g all-purpose flour
  • 150 g unsalted butter, cold
  • 60 ml ice water
  • 3-4 medium quinces
  • 100 g honey
  • 50 g sugar
  • 1 egg (for egg wash)
  • Pinch of salt

Instructions

  1. Prepare the pastry dough by combining flour and cold butter until crumbly, then mix with ice water. Chill for at least 30 minutes.
  2. In a pot, combine peeled, cored, and sliced quinces with honey, sugar, and a bit of water. Simmer gently until softened.
