  • 500g puff pastry
  • 200g blackberries
  • 100g sugar
  • 1 lime (juice and zest)
  • 50g powdered sugar
  • Fresh mint leaves
  • A pinch of salt

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Roll out the puff pastry on a lightly floured surface to about 1/4 inch thickness.
  3. Cut the pastry into squares, approximately 4x4 inches.
  4. Score a smaller square inside each to create a border.
  5. Place the pastry squares on a baking sheet lined with parchment paper.
