Ingredients

  • 150g all-purpose flour
  • 75g unsalted butter, softened
  • 50g granulated sugar
  • pinch of salt
  • 150ml fresh grapefruit juice
  • 100g granulated sugar (for curd)
  • 3 large eggs
  • 50ml Campari
  • 50g unsalted butter (for curd)
  • grapefruit slices for garnish

Instructions

  1. Preheat your oven to 180°C (350°F) and prepare the mini tartlet pans.
  2. In a bowl, mix flour, butter, sugar, and salt to form a dough. Chill for 30 minutes.
