Ingredients

  • 6 sheets of filo pastry
  • 100g of unsalted butter, melted
  • 2 medium beetroot, peeled and diced
  • 150g feta cheese, crumbled
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Roll out the filo pastry sheets and cut them into squares.
  3. Layer multiple squares of pastry on top of each other, brushing melted butter between each layer.
  4. Place the pastry layers into a muffin or tartlet tin to form small cups.
  5. Bake the pastry cups for about 10-15 minutes until golden and crispy.
  6. While the pastry is baking, peel and cube the beetroot.
  7. Roast the beetroot cubes in the oven or boil until tender, then let cool.
  8. Once the pastry is done and cooled, fill each basket with roasted beetroot cubes.
