Ingredients

  • 200g digestive biscuits
  • 100g unsalted butter, melted
  • 1 teaspoon fresh thyme, chopped
  • 300g cream cheese
  • 200g blue cheese
  • 150g granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 150g fresh figs, sliced
  • 2 tablespoons honey

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. In a food processor, blend biscuits, thyme, and melted butter until combined.
  3. Press the mixture into the bottom of a springform pan to create the crust.
