  • 1 cup shredded coconut
  • 1/2 cup all-purpose gluten-free flour
  • 1/3 cup coconut oil
  • 1/4 cup maple syrup
  • 1 cup fresh lemon juice
  • 1/2 cup coconut milk
  • 1/4 cup cornstarch
  • 1/2 cup sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.
  2. In a mixing bowl, combine 1 cup of shredded coconut, 1/2 cup of all-purpose gluten-free flour, 1/3 cup of coconut oil, and 1/4 cup of maple syrup. Mix until crumbly.
