Ingredients

  • 200g all-purpose flour
  • 100g coconut oil
  • Pinch of salt
  • 60ml cold water
  • 300g strawberries (fresh)
  • 50g sugar (for compote)
  • 10ml lemon juice
  • 150g aquafaba (from chickpeas)
  • 100g sugar (for meringue)
  • Pinch of cream of tartar

Instructions

  1. Preheat your oven to 180°C (350°F) and prepare the tart shells by lightly greasing them or using non-stick spray.
  2. In a mixing bowl, combine flour, coconut oil, and a pinch of salt, then add a little ice water until the dough forms. Roll out and fit into tart pans.
  3. Bake the tart shells for about 15 minutes until lightly golden. Let them cool.
  4. In a saucepan, combine strawberries, sugar, and lemon juice over medium heat. Cook until the strawberries break down and mix well to create the berry compote.
  5. Once the compote has cooled, fill each tart shell with it, leveling it out evenly.
  6. To make the meringue, whip the aquafaba with a pinch of cream of tartar until stiff peaks form. Gradually add sugar while continuing to mix.
  7. Pipe the meringue onto the filled tarts in decorative peaks.
  8. Bake the tarts for an additional 5-10 minutes or until the meringue is golden brown. Watch closely to prevent burning.
  9. Let cool before serving or refrigerate to serve chilled.
  10. Optionally, top with fresh strawberries or mint leaves before serving.
