Ingredients

  • 200g digestive biscuits
  • 100g melted butter
  • 200g white chocolate
  • 300ml heavy cream
  • 3 egg yolks
  • 50g sugar
  • 100g additional white chocolate for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and line a square baking pan with parchment paper.
  2. In a bowl, combine 200g of crushed digestive biscuits and 100g of melted butter, mixing until well combined.
  3. Press the mixture evenly into the base of the prepared pan and bake for 10 minutes before removing and cooling.
  4. In a saucepan, gently melt 200g of white chocolate over low heat, stirring constantly.
  5. Add 300ml of heavy cream to the melted chocolate, mixing until fully combined and smooth.
  6. In a separate bowl, whisk together 3 egg yolks and 50g of sugar until pale and fluffy.
  7. Gradually pour the chocolate mixture into the egg mixture, whisking continuously.
  8. Return the combined mixture to the saucepan and cook over low heat until thickened, stirring constantly for about 5-7 minutes.
  9. Pour the custard over the biscuit base and spread evenly.
  10. Chill in the refrigerator for at least 4 hours or until set.
  11. For the topping, melt an additional 100g of white chocolate and allow to cool slightly before spreading over the custard layer.
  12. Once set, slice into squares and serve chilled.
