Ingredients

  • 250ml water
  • 100g butter
  • 150g all-purpose flour
  • 3 eggs
  • 200g ripe mango
  • 150g yogurt
  • 50g sugar
  • 200ml cream
  • Fresh mint leaves for garnish

Instructions

  1. Preheat your oven to 200°C (392°F).
  2. In a saucepan, heat 250ml of water with 100g of butter until the butter is melted.
  3. Remove from heat, and stir in 150g of all-purpose flour until combined.
  4. Add 3 eggs one at a time, mixing well until the dough is smooth and glossy.
  5. Pipe choux pastry onto a baking sheet, making small rounds.
  6. Bake for 25-30 minutes until golden and puffed up, then cool on a wire rack.
  7. For the filling, blend 200g of ripe mango with 150g of yogurt and 50g of sugar.
  8. Whip 200ml of cream and fold it into the mango mixture.
  9. Once the choux shells are cool, slice them in half and fill with the mango mousse.
  10. Garnish with fresh mint leaves before serving.
