Ingredients

  • 150g cashews
  • 100g pitted dates
  • 50g melted coconut oil
  • pinch of salt
  • 200g pitted dates
  • 100ml coconut milk
  • 100g unsweetened shredded coconut
  • optional: chopped cashews for topping

Instructions

  1. Preheat the oven to 180°C (350°F) and line a square baking pan with parchment paper.
  2. In a food processor, blend 150g of cashews into a fine flour.
  3. Add in 100g of pitted dates, 50g of melted coconut oil, and a pinch of salt. Process until well combined.
  4. Press the mixture evenly into the bottom of the lined baking pan to create the crust.
  5. In another bowl, mix 200g of pitted dates, 100ml of coconut milk, and 100g of unsweetened shredded coconut. Blend until smooth to create the filling.
  6. Spread the coconut-date cream evenly over the cashew crust in the baking pan.
  7. Optionally, sprinkle some chopped cashews on top.
  8. Bake in the preheated oven for 25-30 minutes or until the top is lightly golden.
  9. Remove from the oven and let cool completely before slicing into bars.
