Ingredients

  • 150g all-purpose flour
  • 75g unsalted butter
  • 50g sugar
  • 1 egg yolk
  • 200ml milk
  • 100ml cream
  • 3 egg yolks
  • 75g honey
  • 1 tablespoon dried lavender

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Prepare the shortcrust pastry by mixing flour and butter until crumbly.
  3. Add sugar and egg yolk, then mix into a dough.
  4. Roll out the dough and line tartlet pans.
  5. Bake the shells for 15 minutes or until golden brown.
  6. In a saucepan, heat milk and cream until just simmering.
  7. In a bowl, whisk egg yolks, honey, and lavender.
  8. Gradually add the hot milk mixture to the egg mixture, whisking continuously.
