Ingredients

  • 120g all-purpose flour
  • 60g unsalted butter
  • 150ml water
  • pinch of salt
  • 3 large eggs
  • 250g mascarpone cheese
  • 50ml strong brewed coffee (cooled)
  • 50g powdered sugar
  • 100g dark chocolate (for glaze)
  • cocoa powder (for dusting)

Instructions

  1. Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. In a saucepan, combine water, butter, and a pinch of salt. Heat until the butter melts.
  3. Remove from heat and stir in flour until a smooth dough forms. Let cool slightly.
  4. Add eggs one at a time, mixing well after each addition until the dough is glossy and smooth.
  5. Transfer the dough to a piping bag and pipe out 10cm long strips onto the prepared baking sheet.
  6. Bake for 25 minutes or until the éclairs are puffed and golden brown. Let them cool completely.

  8. Use a sharp knife to create small slits on the sides of the éclairs and fill them with the coffee mascarpone mixture.
