  • 200 grams all-purpose flour
  • 60 grams sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 120 milliliters milk
  • 60 grams melted butter
  • 300 milliliters milk (for cream)
  • 100 grams sugar (for cream)
  • 3 egg yolks
  • 2 tablespoons cornstarch
  • 50 grams unsalted butter
  • 100 grams shredded coconut
  • 1 teaspoon coconut extract

Instructions

  1. Prepare the coconut pastry cream by heating milk, coconut extract, and sugar in a saucepan until warm. Whisk together egg yolks and cornstarch in a bowl.
  2. Gradually add the warm milk mixture to the bowl, whisking constantly. Return the mixture to the saucepan and cook over medium heat until thickened.
  3. Remove from heat and stir in butter and shredded coconut. Allow the pastry cream to cool completely.
  4. Make the donut batter by mixing flour, baking powder, sugar, and salt in a bowl. In another bowl, whisk eggs, milk, and melted butter.
