Ingredients

  • 200g pistachio flour
  • 100g all-purpose flour
  • 100g sugar
  • 1 teaspoon baking powder
  • Pinch of salt
  • 200ml almond milk
  • 2 tablespoons vegetable oil
  • 1 teaspoon vanilla extract
  • 100g powdered sugar
  • 2 tablespoons rose water
  • Red food coloring (optional)
  • Chopped pistachios (for garnish)

Instructions

  1. Preheat your oven to 175°C (350°F) and line a mini muffin tin with baking cups.
  2. In a large mixing bowl, combine 200g of pistachio flour, 100g of all-purpose flour, and 100g of sugar.
  3. Add 1 teaspoon of baking powder and a pinch of salt. Mix well until combined.
  4. In a separate bowl, mix together 200ml of almond milk, 2 tablespoons of vegetable oil, and 1 teaspoon of vanilla extract.
  5. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  6. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  7. Bake for 15-20 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow the cake bites to cool completely on a wire rack.
  9. While the cakes cool, prepare the rose glaze by mixing 100g of powdered sugar with 2 tablespoons of rose water and a few drops of red food coloring until smooth.
  10. Once cooled, dip the tops of each cake bite into the rose glaze, allowing the excess to drip off.
  11. Sprinkle chopped pistachios on top while the glaze is still wet.
  12. Allow the glaze to set before serving.
