Ingredients

  • 500g all-purpose flour
  • 75g sugar
  • 10g salt
  • 10g instant yeast
  • 3 large eggs
  • 200ml warm milk
  • 100g softened butter
  • 500ml milk
  • 100g ground pistachios
  • 100g sugar (for custard)
  • 50g cornstarch
  • 3 egg yolks
  • 100g whipped cream
  • Crushed pistachios (for topping)

Instructions

  1. In a large bowl, combine 500g all-purpose flour, 75g sugar, 10g salt, and 10g instant yeast.
  2. Add 3 large eggs and 200ml warm milk, stirring until combined.
  3. Knead the dough for about 10 minutes until smooth.
  4. Add 100g softened butter and knead until fully incorporated.
  5. Cover the dough and let it rise in a warm place for 1 hour until doubled in size.
  6. Meanwhile, prepare the pistachio custard by heating 500ml milk with 100g ground pistachios and 100g sugar.
  7. In a bowl, whisk together 50g cornstarch and 3 egg yolks.
  8. Once the milk is hot, gradually mix it into the yolks, then return to heat until thickened.
  9. Cool the custard and fold in 100g whipped cream.
  10. Punch down the dough and divide it into 8 equal pieces.
  11. Shape each piece into a ball and place it on a baking sheet lined with parchment paper.
  12. Let the buns rise for an additional 30 minutes.
  13. Preheat your oven to 180°C (350°F) and bake the buns for 20-25 minutes until golden brown.
  14. Allow to cool, then pipe the pistachio custard on top and sprinkle with crushed pistachios.
