Ingredients

  • 125ml water
  • 50g unsalted butter
  • 1 pinch salt
  • 75g all-purpose flour
  • 2 large eggs
  • 250g mascarpone cheese
  • 2 tablespoons honey
  • 100g granulated sugar for caramel

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. In a saucepan, combine 125ml water, 50g butter, and a pinch of salt, and bring to a boil.
  3. Remove from heat and stir in 75g all-purpose flour until smooth.
  4. Add 2 eggs one at a time, mixing well after each addition until the dough is glossy.
  5. Transfer dough to a piping bag and pipe 10cm long strips onto a baking tray.
  6. Bake for 20-25 minutes until golden brown and puffed.
  7. Remove from oven and allow to cool completely on a wire rack.
  8. For the filling, mix 250g mascarpone cheese and 2 tablespoons honey until smooth.
  9. Using a pastry bag, fill each eclair with the honey-mascarpone mix through a small opening in the side.
  10. For the glaze, melt 100g sugar with a splash of water until caramelized, then drizzle over filled eclairs.
  11. Serve immediately or refrigerate until serving time.
