Ingredients

  • 250g puff pastry
  • 150g sugar
  • 75g unsalted butter
  • 200ml heavy cream
  • 300g pastry cream
  • Salt, to taste
  • Powdered sugar, for dusting

Instructions

  1. Preheat your oven to 200°C (400°F) and line a baking tray with parchment paper.
  2. Roll out puff pastry to about 3mm thickness and cut it into rectangles, ensuring to have an even number of pieces.
  3. Poke holes with a fork in the pastry to prevent it from puffing too much during baking.
  4. Place on the baking tray and bake for 15-20 minutes until golden brown; allow to cool completely.
  5. Prepare salted caramel sauce by heating sugar in a pan until it melts. Once melted, add butter and cream and stir until smooth. Set aside to cool.
  6. For the diplomat cream, combine pastry cream and whipped cream in a bowl; fold together gently.
  7. Assemble the mille-feuille by placing one pastry layer, followed by diplomat cream, and drizzle with salted caramel sauce. Repeat with additional layers and top with another pastry sheet.
  8. Chill in the refrigerator for at least 2 hours before serving.
  9. Just before serving, dust with powdered sugar and drizzle more salted caramel on top.
