Ingredients

  • 250 ml water
  • 100 g unsalted butter
  • 1 tsp sugar
  • 1/4 tsp salt
  • 150 g all-purpose flour
  • 4 large eggs
  • 150 g granulated sugar (for custard)
  • 4 large egg yolks
  • 30 g cornstarch
  • 180 ml fresh lemon juice
  • Zest of 2 lemons
  • 4 large egg whites (for meringue)
  • 100 g granulated sugar (for meringue)

Instructions

  1. Preheat your oven to 210°C (410°F).
  2. In a saucepan, combine water, butter, sugar, and salt. Heat until the butter melts.
  3. Add flour all at once and stir vigorously until the mixture forms a ball.
  4. Remove from heat and let cool slightly. Beat in eggs one at a time until dough is smooth.
