Ingredients

  • Puff pastry (500g)
  • Egg yolks (4)
  • Granulated sugar (100g)
  • Cornstarch (30g)
  • Milk (500ml)
  • Hazelnut paste (80g)
  • Sugar (100g) for praline
  • Chopped hazelnuts (50g)
  • Dark chocolate (100g) for drizzling

Instructions

  1. Preheat the oven to 200°C (390°F). Prepare a baking sheet lined with parchment paper.
  2. Roll out the puff pastry into a rectangle about 3mm thick and cut it into equal rectangles.
  3. Bake the pastry rectangles in the preheated oven for 15-20 minutes until golden brown. Let them cool completely.
  4. For the hazelnut custard, whisk egg yolks, sugar, and cornstarch in a bowl until smooth.
  5. Heat milk in a saucepan until it starts to simmer. Gradually pour the hot milk into the egg mixture while whisking constantly.
  6. Return the mixture to the saucepan and cook over medium heat until thickened. Remove from heat and stir in hazelnut paste. Allow it to cool.
  7. For the praline crunch, melt sugar in a pan until it turns into caramel. Pour it over chopped hazelnuts and let it set. Once cooled, break into small pieces.
  8. Assemble the mille-feuille by spreading hazelnut custard between layers of puff pastry, topping with praline crunch on each layer.
  9. Drizzle with melted chocolate before serving.
