Ingredients

  • Water - 250ml
  • Unsalted butter - 100g
  • All-purpose flour - 125g
  • Salt - a pinch
  • Eggs - 3 large
  • Milk - 500ml
  • Instant coffee - 10g
  • Egg yolks - 4
  • Granulated sugar - 100g
  • Cornstarch - 30g
  • Whipped cream - 250ml
  • Semi-sweet chocolate - 150g
  • Unsalted butter (for glaze) - 25g

Instructions

  1. Preheat the oven to 200°C (390°F) and line a baking sheet with parchment paper.
  2. In a saucepan, bring water, butter, and a pinch of salt to a boil.
  3. Remove from heat and stir in flour vigorously until the mixture forms a ball.
  4. Allow to cool slightly, then incorporate eggs one at a time until smooth.
  5. Pipe small mounds of choux pastry onto the prepared baking sheet.
  6. Bake for 20-25 minutes until puffed and golden. Let cool completely.
  7. For the filling, whisk together egg yolks, sugar, and cornstarch in a bowl.
  8. Heat milk and coffee in a saucepan until hot, then gradually whisk into the egg mixture.
