Ingredients

  • 125g unsalted butter
  • 150g granulated sugar
  • 2 large eggs
  • 150g self-raising flour
  • 120ml milk
  • 200g dark chocolate
  • 50ml vegetable oil
  • 100g desiccated coconut

Instructions

  1. Preheat your oven to 180°C (350°F). Grease and line a square baking pan with baking paper.
  2. In a mixing bowl, cream together 125g unsalted butter and 150g granulated sugar until light and fluffy.
  3. Add 2 large eggs, one at a time, mixing well after each addition.
  4. In a separate bowl, combine 150g self-raising flour and 120ml milk, then gradually add to the wet mixture, stirring to combine.
  5. Pour the batter into the prepared baking pan and smooth the surface.
  6. Bake for about 30 minutes or until a skewer inserted into the center comes out clean.
  7. Let the cake cool completely before removing it from the pan.
  8. Once cooled, cut the sponge cake into squares.
  9. Prepare the chocolate coating by melting 200g dark chocolate with 50ml vegetable oil over a double boiler.
  10. Dip each square of sponge cake into the melted chocolate, ensuring it is fully coated.
  11. Roll the chocolate-coated cake in 100g desiccated coconut until fully covered.
  12. Place the completed Lamingtons on a wire rack to set before serving.
