Ingredients

  • 250g puff pastry
  • 200g cream cheese
  • 50g powdered sugar
  • 100g fresh blackberries
  • 2 tablespoons fresh basil, finely chopped
  • 1 egg (for egg wash)
  • Flour (for dusting)

Instructions

  1. Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. Roll out the puff pastry on a lightly floured surface to about 1/8 inch thickness.
  3. Use a round cutter to cut out circles of pastry and place them onto the prepared baking sheet.
  4. In a bowl, mix together cream cheese, a tablespoon of powdered sugar, and finely chopped fresh basil until smooth.
  5. Spread a layer of the cream cheese mixture onto half of the pastry circles.
  6. Top with fresh blackberries and cover with the remaining pastry circles.
  7. Gently press the edges to seal and create a slight swirl on top.
  8. Brush the tops with an egg wash made from whisking one egg and a tablespoon of water.
  9. Bake in the preheated oven for 15-20 minutes, or until golden brown.
  10. Let cool slightly, then dust with powdered sugar before serving.
