Ingredients

  • 200g all-purpose flour
  • 100g cold unsalted butter, cubed
  • 50g sugar
  • 1/4 teaspoon salt
  • 3-4 tablespoons cold water
  • 500ml milk
  • 1 teaspoon vanilla extract
  • 3 eggs
  • 75g sugar (for custard)
  • 25g cornstarch
  • 2 tablespoons butter (for caramelizing)
  • 2-3 ripe bananas, sliced

Instructions

  1. Preheat your oven to 180°C (350°F) and prepare a tart pan by greasing it lightly.
  2. In a bowl, mix the flour, salt, and sugar. Cut in the cold butter until the mixture resembles coarse crumbs.
  3. Add the cold water gradually and stir until the dough comes together. Wrap in plastic and refrigerate for 30 minutes.
  4. Roll out the chilled pastry and line the tart pan with it. Trim excess dough.
  5. Place parchment paper over the pastry and fill with baking weights. Bake for 15 minutes, then remove the weights and bake for another 10 minutes until golden.
  6. In a saucepan, heat the milk and vanilla extract until just boiling. In a separate bowl, whisk eggs, sugar, and cornstarch until smooth.
  7. Slowly add the hot milk mixture to the egg mixture, whisking constantly to temper the eggs. Return to the saucepan and cook over medium heat until thickened.
  8. Pour the custard into the baked tart shells and let it cool completely.
  9. In a frying pan, melt butter and sugar over medium heat. Add sliced bananas and cook until caramelized, approximately 2-3 minutes per side.
  10. Top the cooled tarts with caramelized bananas and drizzle with any remaining caramel sauce. Serve chilled or at room temperature.
