Ingredients

  • 250g all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 60g cold unsalted butter
  • 150g shredded cheddar cheese
  • 30g chopped fresh chives
  • 180ml buttermilk
  • 1 large egg

Instructions

  1. Preheat your oven to 220°C (425°F) and line a baking sheet with parchment paper.
  2. In a large bowl, mix together 250g of all-purpose flour, 1 tablespoon of baking powder, and 1/2 teaspoon of salt.
  3. Add 60g of cold unsalted butter, cut into small cubes, and rub it into the flour mixture until it resembles coarse crumbs.
  4. Stir in 150g of shredded cheddar cheese and 30g of chopped fresh chives.
  5. In a separate bowl, combine 180ml of buttermilk with 1 large egg and whisk until well blended.
  6. Pour the wet ingredients into the dry mixture and stir until just combined, being careful not to overmix.
  7. Turn the dough onto a lightly floured surface and gently knead it a few times until it comes together.
  8. Roll out the dough to about 2.5cm thickness and use a round cutter to cut out biscuits.
  9. Place the biscuits on the prepared baking sheet, allowing some space between them.
  10. Bake in the preheated oven for 12-15 minutes or until golden brown.
  11. Remove from the oven and let cool slightly before serving warm.
