Ingredients

  • 200g shredded coconut
  • 150g almond flour
  • 50g coconut oil
  • 250ml fresh lemon juice
  • 150g maple syrup
  • 150g chia seeds
  • Lemon slices for garnish
  • Chia seeds for garnish

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. In a mixing bowl, combine 200g of shredded coconut, 150g of almond flour, and 50g of coconut oil until crumbly.
  3. Press the mixture into a tart pan to form the crust and bake for 15 minutes.
  4. While the crust is baking, blend 250ml of fresh lemon juice, 150g of maple syrup, and 150g of chia seeds until well combined.
  5. Allow the chia mixture to sit for about 10 minutes to thicken.
  6. Once the crust is done, remove it from the oven and pour the chia-lemon mixture into the crust.
  7. Chill the tart in the refrigerator for at least 2 hours to set properly.
  8. Garnish with lemon slices and chia seeds before serving.
