Ingredients

  • 500g puff pastry
  • 250ml milk
  • 100g granulated sugar
  • 30g cornstarch
  • 3 egg yolks
  • 1 tsp vanilla extract
  • 50g unsalted butter
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. Roll out the puff pastry to about 3mm thick, then cut into rectangles (about 10x5cm).
  3. Place the pastry on the baking sheet and prick with a fork to prevent puffing.
  4. Lay another sheet of parchment on top and place another baking sheet over it to keep the pastry flat as it bakes.
  5. Bake for about 15-20 minutes or until golden brown. Remove and cool on a wire rack.
  6. For the custard cream, whisk together sugar, cornstarch, and egg yolks in a bowl.
  7. Heat milk in a saucepan until just boiling, then pour it over the egg mixture slowly while whisking.
  8. Return the mixture to the saucepan and cook over medium heat until thickened, stirring constantly.
  9. Remove from heat and add vanilla extract and butter. Cool to room temperature, then refrigerate until chilled.
  10. Once the pastry is cooled, layer the pastry and custard cream, alternating between the two. Finish with a layer of custard on top.
  11. Dust with powdered sugar before serving. Garnish with mint leaves if desired.
