Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Roll out the puff pastry on a floured surface until it is about 1/8 inch thick.
  3. Cut the pastry into small rectangles (about 4x2 inches) and place them on a baking sheet lined with parchment paper.
  4. Prick the pastry rectangles with a fork to prevent them from puffing up too much.
  5. Bake for 15-20 minutes until golden brown and crisp, then let them cool.
  6. While the pastry cools, prepare the coffee custard by heating milk in a saucepan over medium heat.
  7. In a separate bowl, whisk together egg yolks, sugar, cornstarch, and coffee until smooth.
  8. Once the milk is hot, gradually add it to the egg mixture, whisking continuously.
  9. Return the mixture to the saucepan and cook over low heat until it thickens, stirring constantly.
  10. Remove from heat and let it cool before filling the pastries.
  11. Once the pastries are cool, use a knife to make a small slit in the side.
  12. Fill the pastries with the coffee custard using a piping bag or spoon.
  13. Dust with cocoa powder before serving.
