Ingredients

  • 250g all-purpose flour
  • 80g granulated sugar
  • 10g baking powder
  • 2g salt
  • 60g unsalted butter, cold and cubed
  • 150g fresh cranberries
  • 1 orange, zested
  • 1 large egg
  • 125ml heavy cream
  • Juice of half an orange
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine 250g of all-purpose flour, 80g of granulated sugar, 10g of baking powder, and 2g of salt.
  3. Add 60g of cold, cubed unsalted butter into the flour mixture, and use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.
  4. Gently fold in 150g of fresh cranberries and the zest of one orange.
  5. In a separate bowl, whisk together 1 large egg, 125ml of heavy cream, and the juice of half an orange.
