Ingredients

  • 500g fresh blackberries
  • 100g sugar (divided)
  • 1 tablespoon lemon juice
  • 250g all-purpose flour
  • 1 tablespoon baking powder
  • 1 pinch salt
  • 120g unsalted butter (cold and cubed)
  • 240ml milk

Instructions

  1. Preheat your oven to 190°C (375°F).
  2. In a large mixing bowl, combine 500g of fresh blackberries, 100g of sugar, and 1 tablespoon of lemon juice. Set aside to allow the berries to release their juices.
  3. In another bowl, mix 250g of all-purpose flour, 100g of sugar, 1 tablespoon of baking powder, and a pinch of salt.
  4. Add 120g of unsalted butter (cold and cubed) to the flour mixture and use a pastry cutter to mix until crumbly.
  5. Pour in 240ml of milk and stir until just combined. Do not over mix.
  6. Pour the blackberry mixture into a greased baking dish and carefully spoon the biscuit dough over the top.
  7. Bake in the preheated oven for 35-40 minutes or until the topping is golden brown.
  8. Remove from the oven and let it cool slightly before serving.
  9. Serve warm with a scoop of vanilla ice cream on the side.
