  • 200g dark chocolate
  • 50g unsalted butter
  • 4 egg whites
  • 3 egg yolks
  • 100g sugar
  • Pinch of salt
  • Powdered sugar for dusting
  • Fresh mint leaves for garnish

Instructions

  1. Preheat the oven to 190°C (375°F) and prepare ramekins by greasing them with butter and dusting with sugar.
  2. Melt 200g of dark chocolate and 50g of unsalted butter together over a double boiler, stirring until smooth.
  3. In a bowl, whip 4 egg whites with a pinch of salt until soft peaks form. Gradually add 100g sugar and continue whisking until stiff peaks form.
  4. In another bowl, beat 3 egg yolks into the melted chocolate mixture until well combined.
  5. Gently fold the whipped egg whites into the chocolate mixture in three parts, being careful not to deflate the batter.
  6. Pour the mixture into the prepared ramekins, filling them about three-quarters full.
  7. Bake for 12-15 minutes until the tops are set but the centers remain soft.
  8. Allow to cool for a minute, then carefully run a knife around the edges and invert onto plates.
  9. Dust with powdered sugar and garnish with fresh mint leaves before serving.
