Ingredients

  • 250 ml water
  • 100 g butter
  • 1 pinch salt
  • 150 g all-purpose flour
  • 4 large eggs
  • 300 ml heavy cream
  • 150 g praline paste
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 200°C (392°F) and line a baking sheet with parchment paper.
  2. In a saucepan, combine water, butter, and a pinch of salt. Heat until the butter is fully melted.
  3. Remove from heat, add flour at once, and stir vigorously with a wooden spoon until the dough comes away from the sides of the pan.
  4. Return to low heat for 1-2 minutes to dry the dough slightly, then transfer to a bowl.
  5. Allow to cool for a few minutes, then beat in the eggs one at a time until the mixture is smooth and glossy.
  6. Transfer the dough to a piping bag fitted with a large star nozzle.
  7. Pipe a large ring onto the prepared baking sheet, making sure to connect the ends.
  8. Pipe another ring on top of the first to create height and texture.
  9. Bake for 25-30 minutes until golden brown and crisp. Let cool completely.
  10. For the praline cream, whip the heavy cream until soft peaks form, then gently fold in the praline paste.
  11. Cut the cooled pastry in half and fill with the praline cream using a piping bag.
  12. Dust the top with powdered sugar before serving.
