Ingredients

  • 250g all-purpose flour
  • 125g unsalted butter
  • 60ml cold water
  • 300g strawberries
  • 200g rhubarb
  • 100g sugar
  • 1 tablespoon cornstarch
  • 1 egg (for egg wash)
  • Pinch of salt

Instructions

  1. Preheat your oven to 200°C (425°F).
  2. Prepare the pastry by combining 250g all-purpose flour, 125g unsalted butter, and a pinch of salt in a bowl; mix until crumbly.
  3. Gradually add 60ml cold water and knead until you form a dough. Wrap in plastic wrap and refrigerate for 30 minutes.
  4. In a bowl, combine 300g sliced strawberries and 200g chopped rhubarb, then sprinkle with 100g sugar and 1 tablespoon cornstarch. Toss to coat.
  5. Roll out the dough on a floured surface to a 30cm circle, then transfer to a parchment-lined baking sheet.
  6. Arrange the strawberry-rhubarb mixture in the center of the dough, leaving a 5cm border.
  7. Fold the edges of the dough over the fruit, pleating as necessary to create a rustic look.
