Ingredients

  • 250g all-purpose flour
  • 10g baking powder
  • Pinch of salt
  • 100g cold butter, cubed
  • 150g feta cheese, crumbled
  • 100g sun-dried tomatoes, chopped
  • 150ml milk
  • 1 egg, beaten

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. In a large mixing bowl, combine 250g flour, 10g baking powder, and a pinch of salt.
  3. Add 100g cold, cubed butter to the flour mixture and rub in until it resembles breadcrumbs.
  4. Stir in 150g crumbled feta cheese and 100g chopped sun-dried tomatoes.
  5. In a separate bowl, whisk together 150ml milk and 1 beaten egg.
  6. Pour the milk and egg mixture into the dry ingredients and mix until just combined.
  7. Turn the dough onto a lightly floured surface and knead gently for a few seconds.
  8. Pat the dough into a round about 3cm thick, then cut into triangles or rounds.
  9. Transfer the scones to a baking tray lined with parchment paper.
  10. Brush the tops with a bit of milk for a golden finish.
  11. Bake for 15-20 minutes or until golden brown.
  12. Remove from the oven and let cool slightly before serving.
