Ingredients

  • 500g all-purpose flour
  • 10g salt
  • 40g sugar
  • 10g instant yeast
  • 250ml warm milk
  • 100g softened butter
  • 200g cold butter
  • Almond cream (to taste)
  • 1 egg (for wash)
  • Powdered sugar (for icing)
  • Milk (to mix with icing)

Instructions

  1. In a bowl, combine 500g all-purpose flour, 10g salt, 40g sugar, and 10g instant yeast.
  2. Gradually mix in 250ml warm milk and 100g softened butter until a dough forms.
  3. Knead the dough for about 10 minutes until smooth, then let it rest for 1 hour.
  4. Roll the dough into a rectangle and layer 200g cold butter on half the dough.
  5. Fold the dough over to encase the butter, then roll out again into a large rectangle.
  6. Repeat the folding and rolling process three times to create layers.
  7. Chill the layered dough for 30 minutes between folds if needed.
  8. Roll the dough out to about 1cm thick and cut into triangles.
  9. Spread almond cream filling on each triangle and roll them up to form croissants.
  10. Place croissants on a baking sheet, cover, and let rise for 1 hour.
  11. Preheat the oven to 200°C (400°F) and brush croissants with egg wash.
  12. Bake for 15-20 minutes until golden brown.
  13. Cool slightly and drizzle with a glossy icing made from powdered sugar and milk.
