Ingredients

  • 250g chorizo
  • 1 red bell pepper, diced
  • 1 onion, diced
  • 100g manchego cheese, diced
  • 500g empanada dough
  • 1 egg (for brushing)

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. In a skillet, cook 250g of chorizo over medium heat until browned.
  3. Add 1 diced red bell pepper and 1 diced onion, and sauté until softened.
  4. Stir in 100g of diced manchego cheese until melted, then remove from heat.
  5. Roll out 500g of empanada dough and cut into circles about 10cm in diameter.
  6. Place a spoonful of the filling in the center of each circle.
  7. Fold the dough over and press the edges to seal. Use a fork to crimp the edges.
  8. Brush the empanadas with a beaten egg for a golden finish.
  9. Bake in the preheated oven for 20 to 25 minutes, or until golden brown.
  10. Let cool slightly before serving for the best flavor.
