Ingredients

  • 250 grams all-purpose flour
  • 125 grams unsalted butter, cold
  • 50 grams granulated sugar
  • 1 teaspoon salt
  • 60-80 milliliters ice water
  • 600 grams fresh peaches, sliced
  • 30 grams brown sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon lemon juice
  • 1 egg, for wash

Instructions

  1. Preheat your oven to 190°C (375°F).
  2. Make the crust by mixing flour, sugar, and salt in a bowl. Cut in cold butter until the mixture resembles coarse crumbs.
  3. Add ice water gradually and mix until the dough forms. Shape it into a disk and refrigerate for 30 minutes.
  4. While the dough chills, wash and slice the peaches into thin wedges.
