Ingredients

  • 500g all-purpose flour
  • 100g sugar
  • 7g dry yeast
  • 250ml warm milk
  • 80g unsalted butter, melted
  • 1 large egg
  • 500ml milk (for custard)
  • 100g sugar (for custard)
  • 4 egg yolks
  • 30g cornstarch
  • 50g hazelnut paste
  • 2 shots espresso
  • Chopped hazelnuts for topping

Instructions

  1. Prepare the dough by combining flour, sugar, salt, and yeast in a bowl. Add warm milk, melted butter, and egg. Knead until smooth.
  2. Let the dough rise in a warm place for about 1 hour, until it has doubled in size.
  3. While the dough rises, prepare the hazelnut espresso custard by whisking together milk, sugar, egg yolks, cornstarch, hazelnut paste, and espresso.
  4. Cook the custard over medium heat until it thickens. Remove from heat and let it cool.
  5. Punch down the risen dough and roll it out onto a floured surface into a rectangle.
  6. Spread the cooled custard evenly over the dough, then roll it tightly into a log.
  7. Cut the log into 12 equal pieces and place them into a greased baking dish.
  8. Cover and let the rolls rise again for about 30 minutes.
  9. Preheat the oven to 180°C (350°F).
  10. Bake the rolls for 20-25 minutes or until golden brown.
  11. Once baked, allow them to cool slightly before topping with chopped hazelnuts or a light drizzle of icing, if desired.
