Ingredients

  • 500g all-purpose flour
  • 60g sugar
  • 10g salt
  • 10g instant yeast
  • 3 large eggs
  • 200ml warm milk
  • 100g unsalted butter
  • 200ml heavy cream
  • Zest of 2 lemons
  • 50g powdered sugar

Instructions

  1. In a mixing bowl, combine 500g of all-purpose flour, 60g of sugar, and 10g of salt.
  2. Add 10g of instant yeast and mix well.
  3. Create a well in the center and add 3 large eggs and 200ml of warm milk.
  4. Melt 100g of unsalted butter and add it to the mixture.
  5. Knead together until smooth and elastic, then let it rise in a warm place for 1 hour.
  6. For the lemon cream, whisk together 200ml of heavy cream, zest of 2 lemons, and 50g of powdered sugar until thick.
  7. Preheat the oven to 180°C (350°F).
  8. Punch down the risen dough and divide it into equal portions, shaping them into balls.
  9. Place the dough balls in a lined baking tray and let them rise for another 30 minutes.
  10. Bake for 15-20 minutes until golden brown.
  11. Once cooled, carefully make an indentation in each bun and fill with the lemon cream.
