Ingredients

  • 125 g water
  • 75 g unsalted butter
  • 1/2 teaspoon salt
  • 125 g all-purpose flour
  • 3 large eggs
  • 3 large egg yolks
  • 100 g sugar
  • 60 ml fresh lemon juice
  • Zest of 2 lemons
  • 240 ml heavy cream
  • 3 large egg whites
  • 150 g sugar (for meringue)

Instructions

  1. Preheat the oven to 200°C (400°F) and line a baking tray with parchment paper.
  2. In a saucepan, combine water, butter, and salt over medium heat until the butter melts.
  3. Add flour all at once and stir until the mixture forms a ball and pulls away from the sides of the pan.
  4. Remove from heat and let it cool for a few minutes.
  5. In a bowl, beat eggs one at a time into the flour mixture until smooth and glossy.
