Ingredients

  • 200g all-purpose flour
  • 300g granulated sugar
  • 75g unsweetened cocoa powder
  • 1.5 teaspoons baking powder
  • 1.5 teaspoons baking soda
  • Salt (pinch)
  • 2 large eggs
  • 240ml milk
  • 120ml vegetable oil
  • 2 teaspoons vanilla extract
  • 240ml boiling water
  • 250g unsalted butter
  • 300g powdered sugar
  • 75g cocoa powder (for frosting)
  • 60ml heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a mixing bowl, combine 200g of all-purpose flour, 300g of granulated sugar, 75g of unsweetened cocoa powder, 1.5 teaspoons of baking powder, 1.5 teaspoons of baking soda, and a pinch of salt.
  3. In another bowl, mix 2 large eggs, 240ml of milk, 120ml of vegetable oil, and 2 teaspoons of vanilla extract.
  4. Gradually combine the wet and dry ingredients, mixing until well combined.
  5. Pour in 240ml of boiling water, mixing until the batter is smooth.
  6. Divide the batter evenly between the prepared pans and bake for 30-35 minutes.
  7. Once done, allow the cakes to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  8. While the cakes cool, prepare the frosting by whipping 250g of unsalted butter until creamy. Gradually add 300g of powdered sugar, 75g of cocoa powder, and 60ml of heavy cream, mixing until fluffy.
  9. Once the cakes are completely cool, place one layer on a serving plate and spread a layer of frosting on top. Add the second layer and cover the entire cake with the remaining frosting.
